The Iwaki couldn't be simpler to use - you don't even have to worry about the water drip time. Just put your finely grounded coffee into the tank beaker, and add ice water to the top water tank. The flow of liquid is automatically controlled.
Most of the acidity in coffee is created when we heat it up. The cold brew coffee describes the process whereby coffee-grounds are steeped in water that is either cold or at room temperature for at least 12 hours. Using cold brew for your coffee will reduce the acidity of the drink by at least 70%. Because a cold brew takes at least half a day to make, the coffee is concentrated, which will provide the same extraction as fresh brews mixed with boiling water but without the acidity.
